Matcha & Mango Yogurt Clusters

I have come here to say that it is official, and I have been influenced by the social media craze of making yogurt clusters.  Everytime I pop on my feed, somebody else has made a cluster of yogurt-covered fruit, frozen it, and then added some sweet coating on the top. It has been finally time for me try to make some of my own!  My first yogurt cluster creation I have been inspired to make are made with matcha, white chocolate, mangos enveloped in vanilla yogurt, and some coconut flakes to round everything off.  This turned out to be such a versatile spring/summer snack that I got to share with my friends and that will motivate me to experiment with some other yogurt cluster mixture sin the future. 

Ingredients

  •  1.5 cups of vanilla greek yogurt

  • 1 large ripe mango (For my first time, I used regular mango but I actually highly recommend using 3-4 honey mangos in replacement as well)

  • 2 tbsp good quality honey

  • 2 tbsp ceremonial grade matcha

  • 1.5 cups of white chocolate

  • 1 tbsp coconut oil

  • Coconut flakes for garnish (optional)

  • Sea salt for garnish (optional)

Instructions

  1. In a large bowl, combine the greek yogurt and honey, and stir together til smooth

  2. Add in the diced mango and continue to stir the mixture until all the mango is fully coated.

  3. Line a baking sheet with parchment paper and use an ice cream scooper to scoop up cluster of yogurt and mango.  Line the clusters up on the parchment paper.

  4. Place the baking sheet with the yogurt clusters in the freezer for 2-3 hours. 

  5. Once the clusters are frozen, in a separate medium sized bowl, combine the white chocolate and cocnut oil.  Place in the microwave for 20 second intervals and stir in between each.  Once the chocolate and cocnut oil are smooth, add in the ceremonial grade matcha, and continue to stir until the mixture is a solid light green color.

  6. Pick up one cluster at a time with a fork, and use the stirring spoon to drizzle the white chocolate matcha over each cluster.  Place back a top of the parchment paper.

  7. Sprinkle clusters with coconut flakes and sea salt for toppings.

  8. Allow clusters to sit in the freezer for 10 or so minutes before enjoying

  9. If allowing the clusters to sit in the freezer for a long time, let them unthaw for 10-15 minutes before serving.

  10. Enjoy!
